-Van breaks down suddenly. Crank, no start
-Codes read P0191
-Van will sometimes start for a few seconds and dies
-Relays, fuses, wiring inspected. All good
-Fuel filter replaced
-Fuel pump replaced
-Van starts after a few attempts
-Van drives 300 miles over the course of 5 days
-Van breaks down again. Crank, no start
-Codes read P0191 again.
-Fuel pressure sensor replaced
-Fuel pump driver Module replaced
-Van starts, runs for 2 minutes, dies
-Codes continue to read P0191
I don't even know how to check fuel pressure at the rail, because I can't find an adapter anywhere that my gauge can attach to to fit that fuel hose without a valve.

The fuel system on your vehicle requires a capable scan tool to obtain that info.
Suggest you look under the rear of the vehicle for the fuel pump driver module which is usually mounted on a cross member just above the spare tire .
Those modules had corrosion problems resulting in some of the problems your vehicle is displaying. The corrosion ate through the case and affected the correct operation of the FPDM, Fuel Pump Driver Module.
Check it out and if you see that corrosion, you have located the CAUSE of the problem.

Unfortunately it did not. I did get it inspected with a capable code reader. Pressure was fine, and every last thing on the van checked out good, apart from the fuel pressure sensor.
I replaced the fuel pressure sensor with an OEM sensor, and still crank but no start. P0191 still

You might pull a spark plug or two and see if they are wet or dry.
If dry , fuel is not getting into the combustion chamber. Could be fuse for injectors,
If wet, could be an ign syst problem.
Depending on which result you find will determine where we go next.
Do we know if the pressure sensor was receiving the needed power to function? That should be checked before replacing anything.
