Strange Truck Issue - SOS

Hey guys, got a question for the experts on here or for anyone who has had a similar issue and can help me figure out the issue. My family runs a farm and uses a ‘09 F250 to haul animals and such. Recently the truck has been having a weird issue and I’ve taken it to a few mechanics and they can’t find anything wrong with it.
The issue will just randomly happen. We will be driving and suddenly it feels like the truck loses some power and the speed will suddenly drop, specifically on the Highway, and the truck seems to limit out at 55 and the rpms will jump to ~2500. After that, one of two things will happen. Either it will run at 55 for a few minutes and then just get a big just a power and be fine again, or it goes downhill fast. When it goes bad, the truck sits at 55 for a bit, then will drop to ~45, then jump back up to 55 or 60, run for a minute, lose power again and drop to 35, jump back to 45, back to 55, back to 35, back to 45, then to 25, then to 45, then to 25, then it stalls. The engine dies and we coast time the side of the road. We turn the keys to off and either it will start immediately and be fine or will make us wait for about 15 minutes and start and be fine. I’m concerned about the truck making it much longer at this point and it seems to be acting up with increasing frequency. Originally it would happen once every couple weeks, now it seems like every few days.
Does anyone have any clue what’s going on? Like I said, mechanics have been stumped. I’d rather fix it than buy a new work truck, but I figured y’all would be the best resource for me. SOS 🚨
