Responded to the other thread you made as well..
But, Id suspect the service center you'll be working at would have a pretty comprehensive electronic data listing source and possibly paper copy for the older applications, or both..
Back in the day, there wasn't all that many variations for filters, oil types, drain plugs.
Today,, a bit more challenging, but most of the newer Ford products will have an oil weight indication on the engine/oil fill area. Owners manuals can be a source and will have the capacity/type info as well if available in the vehicle.
The filter, being the used filter would be removed,, a simple online check against the current filter number in hand should yield a wide range of aftermarket and OE options.
There are also online filter interchange programs that are quick at both specific applications and filter brand options..
Most newer engines don't run straight dino oil, most run syn blend 'or' is a better choice over dino where it is run, some full syn or can be an option.
With online search options, capacities and others are easily found. Charts, books/manuals, if available or supplied work, but the data sources are leaning to the electronic options...
After some time at your job, you probably will be very familiar what to grab and use in house...
